      • The concentration of the quat solution was noted to be at 100 ppm. It was noted that the staff members were diluting the quat solution.The operator was advised not to dilute the quat solution. Please use a test strip to test the concentration and ensure it is maintained at 200 ppm at all times.

      • The sanitizer bucket in the front service area was empty. The sanitizer solutions in the trays beside the equipment in front was at 50ppm of quat.Fresh quat solutions tested at 200ppm were prepared. Ensure sanitizer is replaced every 2 hours and when visibly dirty.
    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • The frozen packaged foods being thawed in the cooler had no date labels on them. Facility requirements is 3 days thawing allowance.Ensure frozen food being thawed un the cooler has a date label to maintain the 3 days policy.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • An equipment was blocking the handwashing sink of the back area.Ensure the handwashing sink is accessible at all times.

      • The paper towel dispenser was noted to be empty. The operator stocked the paper towel dispenser during the inspection. The operator was further advised to ensure that the hand washing station remain fully stocked at all times.
