      • Soiled cleaning cloths were observed on several surfaces around the front service food preparation table and on shelving units.Cleaning cloths should be routinely cleaned and when not in use kept in separate sanitizing solution at the appropriate concentration (Quat solution at 200ppm).
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The following equipment surfaces were insanitary:- Interior base surface of the milk cooler was unclean with spills and debris.- Bottom surface of sandwich cooler was unclean with debris. - Milk spill observed on the interior surfaces of the Drive part cooler.Thorough clean and sanitize surfaces. Ensure surfaces are cleaned routinely on a weekly basis.

      • Surface of the handwashing sink and faucet in the back-room area was insanitary with stains. - Thoroughly clean and disinfect sink and faucet surfaces.Food debris accumulated on countertop surface of the Till & Warming station.- Clean and sanitize surface.

      • An opened milk carton was observed in the dairy cooler under the expresso station. Carton was removed and milk discarded. Ensure foods are covered during storage.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Water was leaking onto the floor from under the dishwashing machine. Operator indicated that the source of leakage was being investigated. Repair leaking plumbing. Clean floors a regular intervals to prevent slip and falls.

      • Quat sanitizer solution with cleaning cloths at the drive bar was measured at 0 ppm. The solution was replaced with a fresh quat sanitizer solution measured at a concentration of 200 ppm during inspection.Ensure sanitizer solutions are maintained at the adequate concentration throughout the day.

      • Debris was found in hard-to-reach areas under the ice box at the espresso bar where syrups are stored. - Clean the floors including hard to reach areas.
