      • 1. Approximately 50-60 hot dogs were stored in hot holding and measured between 12C-45C. Hot holding unit was overflowing with product and could not maintain temperature. Product was a mixture of items taken from cold storage and items that were reheated with no system in place to determine batches or reheating times or temperatures. All hot dogs were removed from hot holding and reheated on the flattop grill to 74C before placing in multiple hot holding units capable of maintaining hot holding temperature.       • ** - improper hot holding was observed: cooked onion pot was stored on top of other stacked cooking equipment and not in hot holding as required. Hotdogs in hot holding were piled up too high, the 2-4th layers were not in contact with heat source or subject to continual hot holding temperatures. PHI educated onsite, the manager (one truck over) was also informed. PHI returned a little while later and observed that the condition had been remedied.

      • Drawer cooler temperature was above 4C. CDI: Operator stated the burger patties held in the cooler would be discarded. Discussed to monitor temperature and not store foods in it until it is 4C or below.
