- It was observed that soup prepared and held hot was not at a correct hot holding temperature. The soup was reheated to 74 C and then held hot above 60 C.

The facility operator has contacted a service repair company, and the hand dryer shall be repaired in the near future. The washroom has been temporarily closed at this time. There is another customer washroom for use.

- Water was observed on the floor in the front food preparation area. When investigated, it appears that ice builds up on the internal bottom surface of the preparation cooler. The ice begins to melt and leaks from the door of this equipment, accumulating on the floor. It is required to remove the water from the floor and ice from the internal bottom surface of the preparation cooler. Repair the cooler to prevent ice build-up if required.

- It was observed that the meatballs measured a hot holding temperature of approximately 46 C. The operator indicated that the meatballs had been cooked in the microwave to 74 C and then placed in the hot holding unit to be held at a temperature above 60 C. The hot holding unit has not been preheated prior to meatballs being placed in the unit. During the inspection, the meatballs were reheated to 74 C and placed in the preheated hot holding. Monitor the temperature to ensure the foods are maintained above 60 C. If the unit does not keep foods above 60 C, do not use.
