      • Observation (CORRECTED DURING INSPECTION): No detectable chlorine sanitizer residual present in the sani-station solution at time of inspection.
      • Corrective Action(s): Staff emptied sani-stuff solutions at time of inspection.
      • Discontinue use of the sani-system solution and return to usage of manual warewashing method for cleaning and sanitizing knives.

      • Observation (CORRECTED DURING INSPECTION): Sani-station used to store knives at the sandwich prep station did not contain adequate sanitizer concentration at time of inspection. <50ppm chlorine residual was present at time of inspection.
      • Corrective Action(s): Employees cleaned and replaced the sanitizer solution at time of inspection. Chlorine residual in the solution is now at 100ppm, per Lamotte 4250-BJ chlorine test paper. Discussed sani-station procedures with operator at time of inspection. Operator indicates that the sani-station system has been in use for approximately 1 year and is widely-used at various Subway locations.
