- Observation (CORRECTED DURING INSPECTION): Walk-in cooler was not maintain in a temperature of below 4C, inspector placed a thermometer inside of the walk-in cooler and waited for 30min, temperature did not go down (range between 6.8C-9C)
- Corrective Action(s): Temperatue log shows walk-in cooler was at 38.2F at 9am. Inspector instrcuted staff to relocated all the protentially hazardous foods (half-defrosted meat balls, deli meat, veggies, mayo etc) into a condiment cooler. Whole fruits and vegetables can remain in the walk-in cooler, some of the meat items returned to the freezer due to not enough capacity from the condiment cooler, please ensure to defrost frozen items under cold running water
