      • Food and single use dishes were stored under hand washing sink in front prep area.Requirement:Do not store any food and dishes under sinks to prevent contamination.

      • Temperature of meat prep cooler in front area was 10.5 C (51F) and internal temperatures of perishable foods stored in inserts of this cooler were: tuna 8C, brisket at 11, capicola sliced meat at 9.6 White cheese at 13.3C and 7.4C, shredded cheese at 7.1C, teriyaki chicken at 7.4C.Requirement: Ensure that perishable foods are stored at 4C or less.Brisket at 11 C and white cheese at 13.3C were discarded.Capicola sliced meat was moved to another cooler during inspection. Put ice packs on rest of the perishable foods.Repair this cooler asap.
