      • Packages of meat and chicken were being thawed in standing water at room temperature.Food was moved to the walk-in cooler.Food is only to be thawed in refrigeration, under constant running cold water, or in the microwave.

      • ** Soup in the hot holding unit was measured to be at 56C. The staff indicated they reduced the temperature of the equipment because the food was too hot. The staff was instructed to increase the temperature and ensure food in hot holding are maintained at a temperature above 60C at all times. Ensure daily hot holding temperature is included on your temperature log.
