      • Observation (CORRECTED DURING INSPECTION): Sanitizer either in spray bottles or bucket were not present at the time of inspection. Operator filled-up a sanitizer bucket with QUAT 200ppm and sanitized food contact surfaces with wiping cloths. Wiping clothes are to be stored in the sanitizer solutuion all the time. Proper sanitation of food contact surfaces was discussed with the operator.

In meantime, do not use unit to store potentially hazardous foods. Staff rearranged products so that potentially hazardous foods are being stored in the functioning unit.

      • Observation (CORRECTED DURING INSPECTION): Back undercounter fridge measured 49 degrees F. MIlk in fridge was probed with a thermometer and had a temperature of 49 deg. F
      • Corrective Action(s): Do not use fridge until it is capable of maintaining foods at 40 degrees F or colder. Staff removed squeeze bottle of salad dressing, lettuce and spinach to another fridge. Monitor temperature and if necessary have it repaired.
