      • Observation:
      • Staff are using a ball of paper towel, placed in a plastic glove, to block the sink drains so they can fill the sinks for warewashing. This is not acceptable or reliable to wash and sanitize dishes.
      • Corrective Action(s):
      • Immediately purchase 3 drain plugs (one for each sink), so the sinks can properly be plugged and filled to wash and sanitize dishes. You may need to purchase commercial grade drain plugs from a food equipment supplier, so the plugs fit correctly.

      • Observation:
      • The drain pipe under the 3-compartment sink is leaking. Water is being caught in a bus pan on the floor. There is food debris accumulating on the outside of the pipe, which will attract and breed flies.
      • Corrective Action(s):
      • Immediately hire a certificed plumber to repair/replace the damaged equipment, so it no longer leaks. Clean the food debris off of the pipe, so flies do not breed in it.
