      • Observation: (CORRECTED DURING INSPECTION) The temperature of one of the preparation cooler cannot hold cold food below 4C. (Public Health Significance) - potentially hazardous foods stored in temperature danger zone can support rapid growth of bacteria.
      • Corrective Action: Operator immediately removed foods from the cooler. Operator to ensure all refrigerators can hold food at 4C or colder at all times.

    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) No active sanitizer detected in sanitizer containers or spray bottles. Sanitizing solutions must be strong enough to destroy bacteria on food contact surfaces to limit the contamination.
      • Corrective Action: Operator change sanitizing solutions (QUAT) and it was able to reach 200 ppm.

      • Observation: Gaps at the bottom of the back door may allow the entry pest. Pests may carry harmful pathogens that could contaminate food items and equipment, increasing the risk of foodborne illness.
      • Corrective Action: Operator to seal door gap.
