- Flooring at the pot wash station was heavily pitted and requires refinishing/repair to be easily cleanable, non-porous, and durable. - November 28, 2023 - Maintenance indicated that flooring repairs in the kitchen area to address pitting are scheduled to be completed by March 2024.- February 21, 2025 - flooring redone in the pot wash room and some patches completed in the dishwasher room. - June 5, 2025 - Several sections of recently refinished flooring in the kitchen and dishwashing areas had worn out and moisture infiltration was evident. Maintenance supervisor indicated that warranty work would be underway to replace the flooring again. Pointed out several baseboard areas where mildew/moisture infiltration seemed to be starting along the walls beneath prep stations to the maintenance supervisor.

Machine was tagged out of service during the inspection. Repair the unit as needed and use the main dishwasher or manually sanitize dishes in the sinks in the meantime.

Condensation and mildew still noted on the windows in these areas.- February 21, 2025 - area was extremely humid and warm with the dishwasher in operation with significant condensation dripping on the windows. The maintenance supervisor indicated that new exhaust fan motors had been ordered for this area and would be replaced within the next month.

New solutions were prepared during the inspection - ensure solutions are replaced with enough frequency to maintain the required concentration, this frequency may vary based on level of use at that station.

- Multiple containers of cooked mushrooms and onions measured below 60C in a hot box unit (43C) - products were discarded. Ensure all hot held food products are kept above 60C at all times.Several reach in and walk in coolers were either missing a thermometer or the thermometer inside was broken - new thermometers were installed during the inspection.

Discussed issue with camp manager.

- Renovations were underway of the dishwashing area flooring resulting in all dishwashers being out of order - no advanced communication of these plans had been made with EPH. Extensive repairs and/or renovations should be discussed with the PHI prior to start of work.Maintenance supervisor indicated that a large scale 2 phase renovation is planned to start on the buffet service area in February 2025. Plans have not yet been submitted for review. The Suncor rep attending the inspection indicated that he would supply a copy of the plans including 3D renderings.

Install an additional hand sink closer to this area. - Observed food handler not washing hands prior to donning gloves. Discussed issue with food handler and camp manager. Ensure glove use is retrained with all food handlers. Noted handprints of food debris on multiple cooler doors and many cooler door handles and hot food holding unit door handles were contaminated with food debris, which indicates that hand washing is not occurring at frequent enough levels to prevent potential cross contamination events. Discussed issue with chef and camp manager during the inspection. Ensure hand washing is being enforced and encouraged during all portions of food preparation. Cooler and warmer unit door handles were cleaned during the inspection.

Discussed this issue with camp manager and chef during inspection. - September 28, 2023 - chef indicated that hand soap and paper towel dispensers were to be installed at the sink located at buffet cookline #4 within the next days of this inspection. - September 28, 2023 - chef indicated that plans to install a hand sink in the current sandwich preparation area were underway.Several other hand sinks were out of order at the time of the inspection and/or without paper towels. Ensure all hand sinks are in good working order and properly supplied with soap and paper towels at all times. Sinks improperly supplied and/or not functioning: - bakery - September 28/23 - both hand sinks were out of order at time of inspection. Chef put in emergency repair requests during the inspections and repairs were started on one sink during the inspection. - salad prep - September 28/23 - new sink had been installed but faucet is loose - dish washing - resolved - bag up room packaging area - resolved

- Gaps to the outside were noted at the back receiving doors. All exterior doors must be completely sealed to the outside to prevent the entry of pests and/or vermin.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- - The cabinetry at multiple hot buffet cooklines was in disrepair (peeling, missing pieces, warped) and requires refinishing to be smooth, non-porous, and easily cleanable. - Flooring at the pot wash station was heavily pitted and requires refinishing/repair to be easily cleanable, non-porous, and durable. - The caulking in the pot washing area was visibly dirty and damaged in some sections. Replace the caulking in this area. - Vent hood above the pot washer did not have a last service date indicated on the service sticker - ensure the unit is properly serviced at the required interval. - In several of the walk-in coolers and freezers some of the lower shelving was less than 6 inches above the floor. Ensure all shelving throughout the kitchen is at least 6 inches above the flooring to allow for effective cleaning and pest monitoring. - The bakery walk-in freezer had a light broken.

- Cutting board counters at the MTO sandwich station were deeply scratched and stained and require refinishing/replacing. Multiple lights in the butcher walk-in cooler were broken and require repair.The dishwashing area requires additional ventilation.The wall next to the butter/spreads cooler in the bag up room requires repair. Additional light is needed in the bakery walk-in freezer.

- Repair the interior door panel of milk dispenser cooler A92976. Panel had been worn down and a hole was visible. Monitor all similar units for similar signs of wear. The dishwasher fringe was visibly dirty and requires cleaning.
