    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A sanitizing bucket with quats sanitizing solution was measured at 50ppm with a submerged cloth. Food handling was occurring and the solution was actively being used.Operator filled a new solution and it was measured at 400ppm (warm solution with bubbles increases the concentration reading temporarily) - this is satisfactory.ACTION:Please increase the frequency of changing the sanitizing solutions during times of high volume use.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There are no chlorine test strips for measuring the dishwasher sanitizing solution concentration.The quats test strips for measuring the manual dishwashing solution and the surface sanitizing solution are expired by more than 1 year.The significant discolouration of the exposed quat test strip indicates that the strips are not being used.ACTION:Please ensure that valid test strips are available for measuring 100-200ppm chlorine and 200-400ppm quats.Please ensure that sanitizing solutions are being tested at least one time (1X) per day.

      • The sink near the dishwasher had a stopper (to plug it) that was wrapped in the plastic bag from a bread bag. Operator noted that the stopped does not fully plug the sink so the plastic bag prevents the water from draining.ACTION:Please acquire a stopper that fully plugs the drain and is intended for that purpose, and is easy to clean.

      • The finishing of the pillar adjacent to the dish sink was observed to be in disrepair.**Please have the finishing repaired to ensure it is smooth, impervious to moisture and cleanable
