    • 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
      • Food handling (garnishes, ice) occurring at bar area. A hand sink is required if handling food.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Prepared pizzas noted out on rack and roll measured at 16C. Ensure they are stored in the fridge until ready to cook.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Edge of counter worn/missing cleanable surface by back hand sink and by microwave in front hot line. Repair counters so they are smooth/easily cleanable.

      • Discussed clarification of expiry dates of food. Veggie chili noted from Dec.11 (5 days), this is reasonable as long as used today. Ensure policy is in place for use-by dates/standards.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. Edge of counter worn/missing cleanable surface by back hand sink and by microwave in front hot line. Repair counters so they are smooth/easily cleanable.2. Faucet leaking at sink by dishwasher. Repair plumbing.3. Hand sink by dishwasher does not have adequate water pressure. Ensure water supply adequate for handwashing.

      • Food debris noted under back preparation tables. Thoroughly clean under back tables to prevent infestations.

      • A build up of grease/debris was noted between hot line equipment; particularly fryers. Ensure line equipment is thoroughly cleaned including hard to reach areas.
