    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. A pink substance (potentially mold) was observed on an upper interior wall of the ice machine. Corrective action: The ice machine must be cleaned regularly (i.e., as part of your routine sanitation procedures) according to the manufacturer's instructions for use.2. A hamper for soiled cloth items is cracked and has been repaired with duct tape. This poses a concern since duct tape is not a cleanable surface, and therefore may trap contaminants and lead to cross-contamination. Additionally, it may introduce physical contaminants to food preparation areas and kitchen laundry. Corrective action: The hamper must be repaired or replaced to render the surface as smooth, durable, easily cleanable, and impervious to moisture.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • KITCHEN AND DRY STORAGE ROOM CEILING LIGHT FIXTURES:1) At the time of inspection, observed a total of five (5) light tubes which were either burnt out or of a light orange tinge and subsequently requires replacement with new light tubes.Adequate level of lighting is required to easier facilitate cleaning.2) Exhaust canopy hood: professional cleaning completed this month by Hydroblast; however, observed a dangling string of caulking inside this same hood and a large portion of this caulking was removed by the Maintenance Staff. However, this existing caulking should be removed and re-caulked.

      • KITCHEN AND DRY STORAGE ROOM CEILING LIGHT FIXTURES:At the time of inspection, observed a total of eleven (11) light tubes in the kitchen which were either burnt out/non-functional/not installed. Moreover, there was also another light tube in need of replacing/installing in the dry storage room for a total of 12.Adequate level of lighting is required to easier facilitate cleaning.
