    • 203 - Critical Food not cooled in an acceptable manner [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) Grated carrot was seen without a label and date on the container in a refrigerator unit used to store products for making sushi.
      • Corrective Action: Operator must ensure all the products processed and transferred to refrigerator unit has date labelled on them.
    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: (CORRECTED DURING INSPECTION) Food (sliced tomatoes, sliced green bell pepper, and cheese) stored in sandwich cooler was at 5 °C shifted to lower working unit
      • Corrective Action: It was noted that food was placed in thick plastic inserts and covered with polythene cover. Operator was told to use metal inserts which exchange heat more readily. As the food was not being used it was transferred to lower working unit which temperature was measured at less than 4°C
