      • Observation (CORRECTED DURING INSPECTION): Deep frying station has lots of food 6-8 containers of food that have been battered and deep fried sitting in large containers to cool.
      • Corrective Action(s): Those items either need to be deep fried for each order, or deep fry the item and place in a small shallow tray or container to cool to 20C in 2 hrs then place in cooler to cool from 20c to 4c in 4 hours. Do not leave them in large containers at room temperature to attempt to cool.

      • Observation (CORRECTED DURING INSPECTION): A lot of food (6-8 containers) of deep fried food being cooled on cart in kitchen for an extended period of time.
      • Corrective Action(s): Discussed proper cooling technique which is 60C-20C in 2 hours or less, then 20C-4C in 4 hours in the cooler. Ensure staff are reminded of the proper practice and to not leave food out for an extended amount of time while cooling
