- Ensure all food in the walk-in cooler is covered.
- 23. Is the facility maintained in a clean and sanitary condition?
- Exhaust hood had grease dripping from it and filters were also dirty. The filters should be cleaned more often than 2 times a week.Some corners, edges, tops of containers, etc. had various amounts of flour, dirt and grease build up. These areas should be addressed more regularily.
