    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Soap and bleach were mixed in the wash step of the 2 comp sink dishwashing method and equipment/utensils were not sanitized. Please follow 2 comp sink manual dishwashing procedure: wash with detergent and rinse with clean water in 1st comp, then sanitize by complete immersion in an approved sanitizer in 2nd comp.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A dirty towel was used under the drain rack for clean food equipment/utensils. Please obtain a proper drain tray.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The ceiling tiles and air change units above the food kiosk were dusty. Please clean.
