      • Observation: Vent hood still has grease residue left from prior operation with previous owner. Corner freezer has food debris and left over detritus from prior operation. These should be currently addressed before operation of this mobile begins so as to limit issues with sanitation and potential cross-contamination from the previous owner.
      • Corrective Action: The observed two pieces of equipment are to be further cleaned prior to operation.
