- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Food items and ingredients stored in the main reach-in cooler were found to be at an initial surface temperature of 10C. Although the cooler was recently opened frequently to prepare snacks for children, the unit was turned colder during the inspection. Recommendation provided for a secondary mini fridge to be obtained as the unit was stocked quite full and possibly affecting the flow of cold air inside the unit, as well as a display thermometer placed inside to monitor temperatures easily.
