    • 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: (CORRECTED DURING INSPECTION) Front prep cooler containing potentially hazardous foods was measured at 7-8 C by end of inspection, approximately forty-five minutes after opening. Operator stated that he uses the space in the unit to proof pizza dough overnight, then turns on the cooler approximately 1/2 hour before store opening to store potentially hazardous food items.
      • Corrective Action: Ensure that cooler is turned on earlier so that it is maintaining 4 C prior to storage of potentially hazardous food items. Maintain a temperature log to have written verification that the cooler is able to maintain 4 C.
    • 212 - Operator has not provided acceptable written food handling procedures [s. 23]
      • Observation: Facility is not maintaining a log to monitor temperatures for refrigeration units on a daily basis.
      • Corrective Action: Ensure that a temperature log is maintained to provide written verification that refrigeration units are working appropriately.
    • 401 - Critical Adequate handwashing stations not available for employees [s. 21(4)]
      • Observation: (CORRECTED DURING INSPECTION) Hand washing station was obstructed with large pot of pasta during inspection. Station was also not equipped with paper towels. Hand washing stations must be kept clear of obstructions and stocked with liquid soap and paper towels at all time to allow for convenient use by staff.
      • Corrective Action: Pot was moved during inspection, ensure that paper towels are available at the hand washing area.
