- Splash guard required for the back of house handwashing sink to prevent splashing onto food equipment/handling areas.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Front prep cooler was not maintaining a temperature of 4C or below. Food in the top and bottom compartments was probed at around 5C. Please monitor and repair the cooler as required. Small amounts of food were stored in the cooler compartments. A timer was implemented to monitor holding times. Discard high-risk food held above 4C for more than 2 hours. Ice can also be added to keep food cold.
