      • 1) In the walk-in cooler on the right food was stored on the floor. - The operator was asked to remove the food containers from the floor and put the food containers on the shelves.2) The food containers in the right cooler were stored uncovered. - The operator was asked to keep food in the cooler covered.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • 1) Dirty scoops were used in all the bulk bins. - The operator was told to ensure that scoops are cleaned at a regular interval. The operator was also told to ensure that proper hand hygiene is followed before touching any scoops. 2) In the rice bin a bowl is being used as a scoop. - The operator was told to ensure they use scoops with handles for any bulk food bin.3) Same scoop was used for different kind of flours. - The operator was told to ensure that separate scoops for different kind of flour to ensure no cross contamination was happening.4) An open flour bag was found in the bulk food area on a shelf above flour bins. - The operator was told that all bulk food after opening should be stored in a container with lid.

      • The baseboard in the onion storage area is not maintained in good repair, making it hard to clean and are accumulating debris- The operator was told to ensure the baseboard is repaired and cleaned.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) Ice machine had buildup inside and around the edges. - The operator was told to fully clean the ice machine. The operator was also told to clean it every night using a cloth dipped in bleach solution.2) Inoperable old mixer was found near the new mixer in an unsanitary condition. - The operator was told to get it thrown away if it is not in use or get it cleaned if they want to keep it.

      • 1) Freezer in the bulk storage area had food debris. 2) The area where onions were stored was dirty. - The operator was told to clean the freezer and area around the onion storage.3) The ceiling vent and canopy over the tandoor were observed to be dirty.- The operator was asked to get it cleaned. 4) The facility overall is in need of cleaning. - The operator was asked to ensure the facility is cleaned.
