- 1. Hand hygiene was not being performed in between tasks. Importance of hand washing was discussed with the operator during the inspection. Hands must be washed in between tasks. 2. Food handlers were unaware of glove policy. Please ensure that gloves must be discarded after each use and in between tasks. Hands must be washed before putting gloves on and after taking them off. Gloves must be changed in between tasks and hands must be washed.

- Hot and cold running water was not observed at the time of inspection. The operator indicated that their potable water spilled during travel. The operator brought the compressor from the truck and started it during the inspection. Food preparation was occurring before the compressor started. Please ensure that hot and cold running must be present at the mobile unit prior to starting food handling. The operator was advised to discard all food items prepped.

Please note all food items must be reheated to the internal temperature of 74 degrees C and then must be stored in a hot holding unit maintained at or above 60 degrees C. Please note that the hot holding unit must reach this temperature prior to storing reheated food items.
