    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) Sanitizing solution for three compartment sink was observed to be below 100 ppm. Bleach solution for adequately sanitizing dishes, utensils and equipment is required to be 100-200 ppm when cleaning using the three compartment sink method.
      • Corrective Action: All equipment and untensils need to be soaked in 100-200 ppm bleach solution for 2 minutes.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Wall behind 3-compartment sink is damaged and worn. All surfaces in the kitchen and food storage areas must be durable, smooth, impervious to moisture, easy to clean and non-toxic.
      • Corrective Action: Wall behind 3-compartment sink must be refinished to provide a surface that's able, smooth, impervious to moisture, easy to clean and non-toxic. Recommend using sheets of Fibreglass-Reinforced Plastic (FRP wall panel) is this will meet this requirement and is very durable.
