- 202 - Critical Food not processed in a manner that makes it safe to eat [s. 14(1)]
- Observation: (CORRECTED DURING INSPECTION) Packaged raw meat was observed on top shelves above raw seafood and ready-to-eat food items in the freezer & refrigerator. (Public Health Significance)- Raw meat and poultry must be stored on the bottom shelf to prevent juices from contaminating lower-risk foods such as seafood, vegetables, or ready-to-eat items. These foods may be consumed raw or cooked at lower temperatures, increasing the risk of food-borne illnesses.
- Corrective Action: Operator was asked to rearrange the food items in the freezer and refrigerator. Meat and poultry were placed on the bottom shelf, seafood was stored above them & ready-to-eat food items were placed on the top shelf to prevent cross-contamination.
- 209 - Repeat Food not protected from contamination [s. 12(a)]
- Observation: Containers of food were stored on the floor in the freezer, refrigerator and back storage areas. (Public Health Significance) - Food items must be stored at least 15 cm (6 in.) off the floor to prevent contamination from dust, dirt & pests. Storing food items on the floor increases the risk of cross-contamination which could lead to potential food-borne illnesses.
- Corrective Action: Operator moved the containers on the floor in the refrigerator to a rolling cart at the time of inspection. Operator ensured that the other containers will be placed on the shelves off the floor.
- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) Wiping cloths left on the counters and not in the sanitizing solution (chlorine-200ppm) between use. (Public Health significance) - Cloths once used can harbour and grow bacteria if left on the counters after use at room temperature.
- Corrective Action: Store wiping cloths in a sanitizing solution of 200 ppm chlorine. The operator was asked to place the cloths in a sanitizing solution of adequate concentration

- Observation: Food items in the walk-in freezer in the back storage area were stored on the ground (Public Health significance) - Storage areas should have adequate shelving such that all materials, including food and food items, are maintained at a minimum of 15 cm (6 in.) off the floor on racks, shelves or pallets. Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
- Corrective Action: Ensure all food items are placed on racks and shelves which are at least 15 cm (6 in.) off the ground to prevent contamination of food as well as to allow for cleaning.

- Observation: (CORRECTED DURING INSPECTION) Raw meat in one of the freezers was seen stored above ready to eat foods and produce. (Public Health significance) - Contact with and dripping fluids from raw foods can contaminate other items and lead to food borne illness.
- Corrective Action: Operator moved the raw meat to a diifferent shelving at the time of inspection. Store raw meats below and isolated from ready to eat items and produce.
