- Observation (CORRECTED DURING INSPECTION): Dishwasher cannot reach a temperature of >71C on plate surface
- Corrective Action(s): Operator to use manual warewashing technique to wash and sanitize all dishware/utensils/equipment. Diswasher can be used for rinsing and sanitizing, but prepare a separate sanitizer solution with the bleach on site to sanitize all dishware. Continue to conduct manual warewashing until dishwasher can achieve a temperature of >71C on plate surface consistently.

- Observation: 1. Dishwasher is unable to reach a temperature of >71C on plate surface. The door for dishwasher is not closing consistently, requires multiple push on the run button prior to cycle beginning. Ran the dishwasher multiple times and a max temperature of 65C is reached at the plate surface
- 2. Main prep cooler is under repair. Repairman was on site at the time of inspection
- Corrective Action(s): 1. Repair the dishwasher to ensure that a temperature of >71C on the plate surface is reached consistently. Repair the door to ensure cycle begins without the need to adjust the door when pressing on the start button.

- Observation: Dishwasher rinse water temperature measured at 54 C at plate. Final rinse gauge on machine not working. Final rinse water temperature must be 71 C at plate.
- Corrective Action(s): Immediately free up double sinks and fill one of the sinks with beach sanitizer at 100 to 200 ppm. Make sure to follow appropriate mixing ratio for volume of sinks in use. 1 oz bleach to 1 gallon water or 28 ml to 4 litres water should work.
- Call service technician to repair unit.
- Implement a daily monitoring system to ensure final rinse temperatures are achieved. Recommend the checks are logged and records kept.

- Observation: Flies observed (moderate) in and around food prep areas in kitchen. Two light traps in place are not working. Operator has attempted to contact Pest Control company with no response.
- Corrective Action(s): Make sure operation has active pest control contract for flies and rodents, given the current horse park environment. These pests cannot become a problem inside any food prep areas.
- Directed fans may help control the entry of flies into facility depending on the access points and air currents. Directional air barriers may control issue.

- Observation: Moderate amount of fly activity noted in food prep areas. Systemic problem site-wide, likely due to equestrian-related activities.
- Corrective Action(s): All food must be protected from common exposure to flies. Prep cooler lid must be closed immediately after sandwich prep. Aslo, all foods must be covered at all times (including inserts on top part of prep cooler). Possible remedies may include use of directional fans at doorways to act as wind screen; keep doors closed at all times; ensure windows are screeened if used and opened. Contact Pest Control services for advice and action.

- Observation: Front kitchen area observed with excessive build-up of food debris; black plastic shelf by dishwash station quite dirty and difficult to clean.
- Corrective Action(s): A) Revise cleaning schedule and improve cleaning practices in front kitchen, especially hard-to-reach areas and under movable shelves as discussed.
- B) Replace black shelving unit with shelving that is easily cleanable (wired shelves or similar). There are too many nooks and recesses on existing shelving unit to allow easy cleaning. It's noticably dusty and dirty. Review at next scheduled inspection.
