    • 23. Is the facility maintained in a clean and sanitary condition?
      • All surfaces throughout the dishpit were in unclean condition. Debris and staining in and around dishpit, Underneath the dishpit mat is wet. Shelves had debris build up. Caulking in corners of dishpit appear to have mould build up. Caulking should be removed and replaced. **CORRECTEDOutstanding:Dish racks had buildup of debris throughout. From photos sent, it appears that the dish racks/trays still require to be deep cleaned. Please ensure this completed.Ensure aforementioned areas, and any other areas with build-up of debris are maintained in clean and sanitary condition.

    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • At the prep station, a large amount of FRP board has been removed at the south wall and wall exposed. Ensure that walls are smooth, easily cleanable and impervious to moisture.Lighting in front of dishpit, and lighting at prep area was very dim. Lights on site require to be bright enough to do work safely. Ensure that lighting is bright enough to complete work safely.
