- Mechanical dishwasher was not repaired but staff report using it and then drying dishes by towel.-Ensure mechanical dishwasher is not used, and that manual dishwashing is performed. Also ensure adequate space for air drying dishes-Operator sent photo showing new setup with racks above sinks cleared for air drying----------Dishwasher had 0 chlorine in sanitizing cycle. No plugs were available for 3 compartment sink.-Operator sent photos after hours showing that plug for 3 compartment sink had been obtained and a solution of 100 ppm chlorine had been made for manual dishwashing-Repair dishwasher so that it sanitizes with 100 ppm chlorine
