      • - Dirty cleaning cloth was observed on the counter.*Staff soaked the cleaning cloth in the sanitizer bucket.**Dirty cleaning clothes are harborage of pathogens and will spread pathogens all over the counter while reused. Cleaning clothes either need to be soaked in the sanitizer solution or put away in the laundry basket at all times while not in use.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • No sanitizer solution was prepared at the start of the inspection. The operator dispensed a premixed quats solution into spray bottle for use during the inspection. As discussed, ensure that a food safe sanitizer is prepared for use and available for sanitizing food contact surfaces whenever the bakery is open.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Bulk food scoops were stored in direct contact with the foods. As discussed, store bulk food scoops in a way to prevent their handles from contacting the bulk supply (ex: outside on a clean surface, inside the container on a hook above the foods, etc).
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Bulk food products and other items were stored adjacent to the handwash sink. As discussed, ensure that the area around the handwashing sink in the kitchen is kept free of food or other items to prevent contamination from water during handwashing.
