      • Observation: Low temperature dishwasher not dipsensing detergent or sanitizer.
      • Corrective Action(s): Repair dishwasher. Technican called during the inspection and will be dispatched this weekend. In the meantime, use the 2 compartment manual dishwashing method according to the provided signage. Facility only uses single use disposable utensils and dishware for customers.

      • Observation: (1) No chlorine residual detected in sanitizing cycle of the dishwasher.
      • (2) Sanitizer solution was prepared mixing soap and bleach.
      • Corrective Action(s): (1) Repair dishwasher to sanitize at a minimum of 50ppm chlorine. In the meantime, manually sanitize using a 100ppm chlorine solution in the 2 compartment sink. Operator purchased sink plugs during the inspection and prepared a sanitizing solution in the sink for manual dishwashing.
      • Correct by: As soon as possible
      • (2) New bleach sanitizer prepared and measured at 100ppm at the time of inspection. Do not use soap for sanitizer as it is not a cleaning agent and not a sanitizing agent.

      • Observation (CORRECTED DURING INSPECTION): No paper towel available at kitchen handsink.
      • Corrective Action(s): Operator restocked paper towel at handsink during the inspection. Ensure hot/cold running water, liquid soap, and paper towels are available at all times to allow for proper handwashing.
