      • - pH of cooked sushi rice being stored at room temperature is not being monitored. Ensure pH strips are obtained and pH is tested and recorded for each batch.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Some prep coolers had no thermometer. Thermometer was provided during inspection. Ensure all coolers have functional thermometer at all times.

      • Iodine test strips were not available for the glasswashers. Ensure iodine strips are available, and glasswashers are monitored at 12.5-25ppm daily.

      • - Hand sink beside the dishwashing sink was not accessible. Ensure all hand sinks are accessible.- 2 of the washrooms are missing soap/ paper towel. Ensure hand sinks are fully equipped.

      • Low temperature dishwasher was measured at 0ppm of chlorine. Staff indicated the kitchen will not be used for the day and a technician will be contacted.Ensure dishwasher is not used for dishwashing until sanitizer can be maintained at 100ppm.

      • Most of the paper towel dispensers were either non-operational or empty at the hand sinks.
