      • All cutting boards must be scrubbed to remove the built-up dirt from the grooves. Scrubbing must be done daily or as often as necessary.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Must display the most recent Food Handling Permit. Use a conspicuous location

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Dirty washcloths were found on food contact surfaces at the time of inspection.Staff promptly removed cleaning cloths, cleaned, and disinfected the above noted areas.- Cleaning cloths should either be kept submerged in a sanitizer solution or clean dry cloths can be used with spray bottles of sanitizer solution.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Dishwasher chlorine sanitizer concentration noted at 50 ppm at the time of inspection.Staff changed sanitizer bucket and sanitizer was tested at 100 ppm chlorine using test strips.- MAKE SURE TO REGULARLY TEST SANITIZER CONCENTRATION USING AVAILABLE TEST STRIPS.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The weather stripping on the back door is in disrepair - some light can be seen coming through gaps at the bottom of door. - Replace weather stripping and ensure that all exterior doors have adequate weather stripping to prevent pest entry.
