    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Half-cooked food items were noted stored in room temperature. The operator mentioned that they half-cook food and then fully cooked when customers order. The inspector informed the operator that half-cooking food is not allowed. Either fully cook the food to reach its safe internal temperature of at least 74°C or keep the food items uncooked. The inspector also informed the operator that no high-risk food can be stored in room temperature. The food items were moved to the cooler.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The cooler by the driver's seat was measured at 12°C. Food items were also measured at 12°C. The food items were discarded during the inspection. The inspector informed the operator not to use the cooler for storing high-risk food items until the cooler is fixed and able to maintain a temperature of 4°C or below.
