- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Supervisor refilled Quats sanitizer bucket at the time of inspection and it was measured at 200 ppm. Ensure Quats sanitizer bucket is refilled/changed at least every 2 hour or more frequently as needed. Spot check with Quats test strip and recorded on your cleaning schedule/sanitation plan.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Milk reach-in cooler was measured at 8C close to cold brew coffee area. Supervisor mentioned this unit's door latch is not closed properly. Ensure higher risk food such as dairy milk, cheese, meat stored at 4 C or colder. Have a thermometer inside this unit to verify temperature and recorded it on your log sheet, cleaning schedule/sanitation plan.
