    • 09. Are chemicals stored and handled in a safe manner?
      • A spray bottle likely containing sanitizer was unlabeled. Its contents were discarded during the inspection. Ensure all bottles are labelled so their contents are known.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A box of bacon was sitting on counter. It was placed into cooler during the inspection. Ensure high risk foods are kept under temperature control at all times.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher was being run on normal cycle rather than sanitize. Facility has domestic dishwasher that is used only at end of day. Ensure it is run on sanitize cycle.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. Board on top of divider wall was worn and no longer impervious to moisture and easy to clean. Operator has plans to replace/refinish.2. Floor finish is worn in area. Operator has plans to redo finish to ensure floor is smooth, durable and easy to clean.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The quats sanitizer measured less than 200ppm. The sanitizer was discarded and a fresh bottle was opened. Ensure quats sanitizer is maintained at 200ppm.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • A package of ground beef was stored on middle shelf of cooler next to lettuce and kale. Ensure raw meat is stored on lower shelf away from other products to prevent cross contamination. This was corrected during the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Packages of frozen meat were thawing in the sink at room temperature. Ensure thawing is done in the refrigerator, under cold running water, or as part of the cooking process. This was corrected during the inspection.
