    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Unacceptable temporary dishwashing set up was observed: three grey bins filled with water and solutions laid out on a table. Event coordinator did not have access to an approved kitchen for dishwashing. Circus management was instructed to use single use disposable utensils to eliminate the need for dishwashing and the grey bins be removed. Obtained single use utensils were observed during the inspection.Ensure that the sink requirements are met during special events.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The potable water container volume was 7L for the temporary hand washing stations did not meet the required minimum 20L volume requirement. Circus management was instructed to obtain a potable water container with a minimum of 20L volume to conduct proper handwashing. The obtained containers were observed during the inspection.Ensure that the requirements for a temporary hand washing set up are met to conduct proper hand hygiene.
    • 17. Are general nuisance conditions, other than those noted in other violations, being prevented at this special event vendor (Non-Critical)?
      • There were no observed container for the chlorine sanitizer solution. Circus management obtained spray bottles for the chlorine sanitizer solution.Ensure that an approved sanitizer solution is mixed appropriately as indicated in the How to Mix an Approved Sanitizing Solution document.
    • 20. Is the facility maintained in a clean and sanitary condition?
      • The hotdog steamer/warmer was observed with brown residue debris. The equipment was cleaned and sanitized during the inspection.Ensure food equipments are clean and sanitized prior to using.
