      • Observation: -Rodent dropping noted in kitchen and dry storage area under cooking equipment and under shelving
      • -Fruit flies and some house flies noted around ice machine and dry storage room
      • Corrective Action(s): -Clean the area and monitor
      • Operator is aware of the issue, Rentokil Steritech is servicing the facility once per week- latest report (May 8-2024) is reviewed- Ensure to seal around piping as noted.
      • - Discuss with Rentokill to address the issue. Light traps is noted just ensure it is set properly to attract flies

      • Observation (CORRECTED DURING INSPECTION): - No sanitizer detected from spray bottle in kitchen and bar.
      • - Mold build up noted on the plate over ice in the ice machine ( top part)
      • Corrective Action(s): -Ensure to re-fill spray bottle with fresh sanitizer and test with test strip to ensure proper concentration.
      • -Clean and sanitize the ice machine plate

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Several spray bottles with sanitizer solutions had insufficient sanitizer concentrations at time of inspection. Operator emptied and refilled all spray bottles with fresh sanitizer solution at time of inspection,
      • Corrective Action(s): Prepare fresh sanitizer solutions daily. Confirm sanitizer concentration of 200ppm quats using test strip(s).

      • Observation (CORRECTED DURING INSPECTION): Sanitizer usage instructions posted on the walls in the kitchen direct employees to use hydrogen peroxide-based disinfectant on food contact surfaces. Instructions on the product label indicate that the hydrogen peroxide disinfectant is not recommended to be used on food contact surfaces.
      • Corrective Action(s): Operator removed the incorrect signage in the kitchen at time of inspection. Please ensure to read and follow the usage directions on the product labels of chemicals. (Ecolab Oasis 146 Multiquat sanitizer and Vitaloxide multisurface disinfectant can be used on food-contact surfaces),

      • Observation (CORRECTED DURING INSPECTION): Observed handles of scoops/spoon in contact with ice used for mixing drinks at the bar
      • Corrective Action(s): Ensure the handles of the ice scoops and other utensils are stored in a manner which protects the ice from potential contamination.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): 1) 0ppm quats residual detected in freshly-filled santizer spray bottles on the prep line. The sanitizer supply chemical was nearly empty at the wall-dispenser, resulting in the dispenser failing to draw sufficient sanitizer concentrate into the spray bottles and pails during use.
      • 2) Sanitizer supply at the bar glasswasher is empty
      • Corrective Action(s): 1) No additional sanitizer concentrate (Ecolab Oasis 146) was available on-site at time of inspection. Instructed staff to fill all sanitizer spray bottles and pails with a chlorine bleach/water sanitizing solution by mixing bleach with water at a ratio of 1 tsp per Litre. This bleach/water solution can be used as an alternative until the new Oasis 146 product arrives.
      • 2) Instructed staff to replace the empty sanitizer container with a fresh one, then prime the pump to remove air from the lines prior to use.
      • **Ensure to confirm sanitizer solution concentrations using test strips at the start of every day
      • **Ensure to keep backup supplies on-hand to replace any chemicals that run out during operation.
