      • The wall mounted potato slicer is mounted to a heavy, bare wooden base, to the wall.The bare wooden base needs to be sealed or painted - for easier cleaning and less chance of slivers into the hands when cleaning it off.

      • Hot and cold food holding temperatures were satisfactory EXCEPT for the right side prep table cooler (next to the Coke cooler ), it was at 10 C.Operator has had this cooler repaired in the past year, but it is not able to keep food temperatures at or below 4 C.Operator is removing food from this unit at night and placing into the walk-in cooler - this is ok as a temporary measure, not as a long term solution.This prep table cooler will need to be repaired again or replaced with a properly functioning unit, as soon as possible.Also the walk-in freezer was being repaired in the afternoon, after this inspection.Operator sent photos the next day, to the PHI, showing the temperature to be -20 C - this part is satisfactory.

      • Hot and cold food holding temperatures were satisfactory, EXCEPT for the right hand prep table cooler on the cooking line - it was at 10 C.Operator is keeping lower risk food items in this cooler like sliced vegetables and whole eggs. These items are removed each night to the walk-in cooler.This will be an acceptable practice until the cooler can be repaired, within the next 2 weeks.As all refrigeration units are to be working properly.March 13, 2024 - this prep table cooler was at 6 C during today's inspection.       • Cooked food items on kitchen steam table were - gravy 35 C, au jus 37 C.These were in a dry insert in the steam table.There needs to be hot water surrounding the insert in able to get proper heat transfer into the food to keep it hot.Operator reheated these food items on the stove and added hot water to the inserts, as directed.

      • Need to clean the floor under the cooking line and work table areas.This is to be a part of at least a weekly cleaning schedule.

      • Dishwasher only had 25 ppm chlorine in the final rinse cycle.This needs to be at 100 ppm chlorine as a minimum.Please ensure that you are using the proper strength of chlorine at 12 % or if using 6% that it dispenses more volume of product during the rinse cycle.As a temporary measure you must add 2 capfuls of household bleach during each rinse cycle.

      • The operator had 2 fly strips hanging from the ceiling, near food processing areas.Operator removed these fly strips during the inspection.

      • Need to clean the drip tray under the stove top burners.Need to clean the wall mounted potato slicer, if it is no longer being used - remove it from the wall.
