- Observation (CORRECTED DURING INSPECTION): Two trays of raw eggs left at room temperature for over 2 hours. Internal temperature of eggs were measured at 22C.
- Corrective Action(s): Egg trays were dicarded during the inspection. Do not store large amounts of perishable foods at room temperature for more than 2 hours as pathogens can grow rapidly in the danger zone.
- *During breakfast rush, take out smaller amounts to use up within 2 hours.

- Corrective Action(s): Repair cooler so it is able to maintain a temperature of 4 C or below.
- Replace gasket around sliding doors and monitor temperatures every 2 hours. If temperature is not able to maintain a temperature of 4 C or below, service cooler.

- 2. Prep line cooler - food in inserts registered around 8 C.
- 3. Back storage cooler at 8 C.
- Corrective Action(s): 1. Discard all potentially hazardous foods and adjust cooler temperature. Operator removed items that were blocking the cooler vents. Do not overstock cooler.
- 2. Food must be kept at 4 C or below. Keep lid on cooler. Try placing food in stainless inserts and remove heat sources near cooler.
- 3. Relocate potentially hazardous foods to another cooler that is 4 C or below.
