    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Storage of drink mixes in bar area in ice meant for serving in drinks.Ice replaced during inspection and drink mixes removed.Scoop also left in ice removed. Spoke with bartender to advise that ice intended for drinks cannot be mixed with bottles.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Hot holder for gravy reading between 45-55. PHI advised cook that hot held food needs to be heated to 75 degrees and then hot held. Cook heated food on stove and then transferred to hot holder.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Soap dispenser not working properly, a pump soap dispenser was placed near sink during inspection.

    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • There was an accumulation of pink debris on the inside lip of the ice machine.The ice machine was emptied and all ice was discarded at the time of the inspection. Operator was instructed to obtain ice from another source until the ice machine could be fully cleaned and sanitized.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Bowls and containers without handles were being used to scoop food, and stored directly in bulk food. Use only scoops with handles and store in a way that protects bulk food from contamination.Bowls were removed once noted.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The test strips onsite, for the surface sanitizer, and dishwasher, had expired. Ensure that staff are testing solutions daily, and ensure that test strips are within their expiration date.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. There was an accumulation of grease on some of the ventilation canopy filters. Ensure that they are cleaned on a weekly basis, and more frequently than that if they are accumulating at an increased rate. According to the certificate, the ventilation canopy is due for its full service.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • There was an accumulation of dust on the fan cover of the walk-in cooler. Clean area noted above.
