      • Chlorine bleach is used to sanitize wiping cloths and surfaces however at the time of the inspection, the chlorine concentration in the cloth bucket was at zero. Please refresh the bleach solution regularly and keep it at 100ppm. Corrected During Inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The filters in the ventilation hood over the pizza oven are dirty. Staff indicated that they are only cleaned every 6 months when the professional company cleans the ducts. These filters should be taken down and cleaned at least monthly to allow for good air filtration.

      • The sanitizing chlorine spray bottle does not have a proper label for staff to easily identify the bottle. Please put "chlorine" label on the container.-Staff complied to appropriately label the bottle.

      • It was observed that one of the food containers does not have a cover/lid to protect food from contaminants.-Staff complied to cover food item.

      • Facility has 3 dishwashing compartment sinks. Inspector reviewed with the staff the wash-rinse-sanitize-air dry method. Always ensure to use a sanitizing agent e.g. chlorine/bleach at 100 ppm.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • It was observed that the wall by the flour mixer needs to be cleaned due to presence of food debris accumulation which could attract pest causing food contamination. -Staff complied to clean the indicated area to maintain a clean and sanitary condition.
