- -Temperatures of all the coolers, freezer and hot holdings were in compliance with the Food Regulation except the preparation cooler, which was measured at 15C (temperature was measured with infra-red thermometer). Internal temperatures of the food stored in the cooler was measured at 15C. Actions taken:-Operator was instructed to immediately transfer the food to the walk-in cooler. Ice immersion method was also discussed. -Operator shifted all the food to the walk-in cooler.-Please get the cooler repaired and do not use it until it is repaired.-Recommendation provided to regularly monitor the temperature and keep the temperature logs onsite.
