      • Two bottles of wine were stored in the ice machine. Do not store bottles of liquor in ice to protect ice from contamination. Owner committed to thawing and sanitizing ice machine.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel dispenser at the front counter hand sink was empty. Paper towel was refilled during inspection.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Tall grass around premise and unused kitchen equipment can become a harborage site and nesting site for pests. Cut grass and remove unused equipment.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Back kitchen door was open at the time of inspection, letting in numerous flies. Screen door did not last. Pest controls are on order and contractors have been scheduled to install air conditioning and a blue light fly catcher.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Swinging door to entrance of the kitchen is constructed of unfinished wood and is absorbant to moisture. Finish wood door panels to allow for easy cleaning or remove doors if not needed.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Sandwich cooler across from the grill is not keeping up with refrigeration due to the heat in the kitchen and measured 15 C. Grill is putting off a lot of heat across from the prep cooler. Hand-cut fries in water measured 10.0 C, Sliced chicken in an insert container measured 23.6 C, Steak in insert container 11.9 C, burger patties 8.9 C. All foods were transported to another cooler. The long prep table also rose in temperature and came down to 7 C after lids were closed for some time. Record morning and evening temperature daily and keep food refrigerated at 4 C or less.

      • Flies are observed in the kitchen and dining area. Reportedly, some measures of fly controls are in place. Please increase fly controls such as increase catch traps. Keep exterior door closed, especially when kitchen door cannot keep flies out. Kitchen swinging door is not effective to keep flies out of the kitchen and could be vermin proofed. A UV attractant light with stickers could be installed.

    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Raw burgers and chicken containers are stored above sauces and lettuce in the line cooler. This was switched during inspection with raw meat stored on the bottom and ready to eat foods stored on the top shelf. An opened can of pineapple was stored in the cooler. This was corrected by storing pineapple in an insert container. Keep raw meat stored below ready-to-eat food. Transfer foods from opened cans to prevent leaching of metals into food.
