Ensure proper two-compartment dishwashing procedures are followed.

- Mechanical dishwasher was not dispensing sanitizer. Sanitizer concentration was checked several times using operator's as well as PHI'S test strips. A new sanitizer bucket was installed. Operator was advised to manually sanitize the dishes in 2 compartments sink until the dishwasher is fixed.
