      • Mechanical dishwasher was noted to be labeled as “Out of Order.” Records indicate the equipment has been non-functional since March 2026 and a replacement part is pending; repairs are in progress.Two-compartment sinks are available in the kitchen for manual dishwashing. Ensure proper two-compartment dishwashing procedures are followed.

      • Water temperature of the handwashing sink equipped with a tempering device was noted at 62°C. This temperature is scalding hot and can cause skin burns. Adjust the water temperature to facilitate safe handwashing.

      • Mechanical dishwasher was not dispensing sanitizer. Sanitizer concentration was checked several times using operator's as well as PHI'S test strips. A new sanitizer bucket was installed. Operator was advised to manually sanitize the dishes in 2 compartments sink until the dishwasher is fixed.

      • Sanitizer concentration monitoring of mechanical dishwasher was not done consistently.Check concentration of sanitizer daily prior to dishwashing and record the results on the log sheet.
