- ***Staff was educated about washing and sanitizing the serving tray. It was not to be rinsed under running water and then wiped with a reusable cloth towel. Food contact surfaces that are to be sanitized using a sanitizer solution (the 100ppm bleach solution was acceptable). If there is time they can be air dried or dried using clean paper towels. The sanitizer solution is not to be rinsed off.

- ***The sanitizer solution was much more that the necessary 100ppm (it bleached the test paper out to white). This is not food safe and could become a chemical contaminant on food contact surfaces.Food handler onsite was directed to use the WayFAM spray that was the effective concentration.
