      • Recurring violation noted on September 5, 2024:Water was pooling at the bottom of the prep cooler opposite the pizza oven.Foods were not kept at the bottom of the prep cooler.Fix the cooler to prevent water from pooling.Previous violation:Water was pooling at the bottom of the prep cooler. Cleaning cloths and tissue paper were placed at the bottom of the prep cooler to absorb the water.-Fix the prep cooler.

      • Fly strip was hung above the meat slicer ceiling.-Remove any fly strip above food handling or preparing area to prevent food contamination.

      • Used tongs was stored on the handled of the pizza oven.-The tongs was washed and switched with a new one.Ensure serving tongs/utensils are stored in ice water between uses at 4°C or less, in hot water between uses at 60°C or greater, stored in a sanitizer solution at the correct concentration (100ppm Chlorine/ 200ppm QUATs), or continuously switch out serving utensils with new utensils.

      • Recurring violation on August 28, 2024:The ambient temperature of the prep cooler at the front house was measured at 6°C. Water is pooling at the bottom of the prep cooler.-Ensure the prep cooler is measured at 4°C at all times.Previous violation:The ambient temperature of the prep cooler was measured at 11 degrees C. Cheese in cooler was measured at 10 degrees C, cheese in insert measured 6.6 degrees C. Staff stated prep cooler freezes up and staff moves food items to the walk-in cooler and unplugs cooler to defrost. Staff stated cooler was just turned on.**Repair/Replace cooler.**Ensure that cooler is able to store and maintain high-risk foods at 4 degrees C and below.

      • Recurring violation noted on August 28, 2024:Front and rear exit door were open.No screen doors were noted.Install screen doors if you want to have the front and back exit doors open. Previous violation:The front and rear door were propped open with no screen doors in place. Staff on site stated the store gets very hot and ventilation system not working properly.**Investigate and remedy ventilation concerns**Install screen doors if doors are to be left open or keep doors closed to prevent infiltration of pest.
