      • Corrective Action(s): This was changed during inspection and now at 200ppm as per label. Recommend running dispenser to remove air before filling bucket.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): Commercial dishwasher was run 5 times and there was no sanitizer in the final rinse (0ppm chlorine using inspector and facility test strips). Note the water temperature is quite hot (about 70C) but this is a dishwasher that requires a final chlorine sanitizing rinse. Wiping cloths are stored in a non-sanitizer solution (0ppm quats and 0ppm chlorine detected with inspector and facility test strips). Spray bottle labelled sanitizer also does not contain sanitizer (contains cleaner that must be rinsed off).
      • Corrective Action(s): Commercial dishwasher line was primed and air bubbles removed - now provides 50ppmm chlorine but this is not consistent. Verify that 50ppm chlorine sanitizer provided and if not, manually sanitizer by immersing clean dishes in 100ppm chlorine until dishwasher is fixed. Automatic dispenser for quats sanitizer (suitable for use on food contact surfaces) is now dispensed at 200ppm. ***Rinse all equipment and food contact surfaces that have been sprayed or wiped with the cleaner, including counters and meat slicer. Then sanitize using a food grade sanitizer (200ppm quats). Discard any food that may have been contaminated with cleaner.

      • Observation (CORRECTED DURING INSPECTION): The two compartment prep sink is not being regularly sanitized. Note that a colander is used to wash produce but the sink needs to be sanitized as well. Sanitizer used in sani-bucket had no sanitizer (0ppm quats detected and 0ppm sink and surface cleaner sanitizer detected in kitchen and server sani-buckets).
      • Corrective Action(s): All utensils, cutting boards, sinks, and food contact surfaces are to be washed with detergent, rinsed with water, and sanitized. Use sanitizers according to their label for safe and proper use. Use test strips to verify and record concentration.

      • Observation: There is evidence of what appears to be mouse activity on floor under dry storage bins near small cooler in main kitchen.
      • Corrective Action(s): Clean floor. Contact licenced pest control. Continue to keep food protected from contamination and to monitor for pests. Seal door at back entrance to kitchen (extension cord may be creating a gap). Provide a copy of the latest pest control reports to Fraser Health.

      • Observation (CORRECTED DURING INSPECTION): There is no final sanitizing rinse for dishes and utensils. The final rinse for low temperature commercial dishwasher had 0ppm chlorine, even after priming sanitizer line. Water temperature for dishwasher is ok for washing. Wiping cloth stored in sanitizing solution - 0ppm detected.
      • Corrective Action(s): Dishwasher can be used for washing and rinsing dishes and utensils. Sink was set up with 100-200ppm chlorine solution to sanitize dishes manually. Immerse dishes and utensils for 2 minutes and air dry. Service dishwasher and use only when a 50ppm final sanitizing rinse (as verified with a test strip) can be achieved. Sanitizing solution in bucket used for storing wiping cloths was changed during inspection and concentration verified to be between 272-700ppm (as required) - good.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer in spray bottle used by servers - concentration measured at 0ppm. This is a cleaner /sanitizer chemical and is being dispensed automatically at 0ppm. As per label, the required concentration for this chemical is 272 - 700ppm using correct test strip.
      • Corrective Action(s): Corrected during inspection: Chemical bottle changed during inspection and the correct concentration was dispensed as measured with test strip appropriate for the chemical. Obtain test strips and keep daily concentration records. Label spray bottle to accurately show contents (label is worn).

      • Corrective Action(s): Clean and organize facility. Remove any unused items. Wall panels and ceiling tile cleaning discussed. Inspect and clean floor drains. Contact professional pest management company for advice on fruit fly control.
