- 1) There was no sanitizer available for manual dishwashing/sanitizing. --obtain a bleach sanitizer or a quats sanitizer which can be used to make a sanitizer solution in the 2nd sink.2) There was no air drying rack for dishes/utensils to air dry after washing/rinsing/sanitizing. -obtain a drying rack
